The Wine Independent Sarah Mayo - 08 Nov 23
An equal parts blend of Pinot Noir and Chardonnay from six different cru, the Hemera 2008 enjoys extended aging on lees resulting in considerable complexity. Alluring and lithe aromas of baked apple, crème brulée, lemon confit, and honey comingle with elegant oxidative notes. The medium to full-bodied palate combines racy acid tension with a vinous texture that is filled out by ripe orchard fruit and a long, honeyed finish. Disgorged January 2023 and finished with a five gram per liter dosage.

Champagne

Champagne, exclusively from France's Champagne region, is synonymous with luxury and celebration. Made primarily from Chardonnay, Pinot Noir, and Pinot Meunier, it undergoes secondary fermentation in the bottle, creating its signature bubbles. Flavours range from crisp green apple and citrus to rich, toasty notes of nuts and honey. Yeast contact in the bottle contributes to pastry and brioche notes, which are a key part of good quality Champagne. Top producers include Moët & Chandon, Veuve Clicquot, and Krug.
